Bacon Wrapped Shrimp with a Wine Sauce Glaze

Event: Grill 116

​Bacon Wrapped Shrimp:
INGREDIENTS
  • 20 large shrimp, peeled and deveined
  • 10 slices of bacon
PREPERATION
  1. Preheat grill for medium heat
  2. Wrap shrimp in bacon and secure with toothpicks
  3. Lightly oil grate, arrange shrimp on the grill. Cook for 3 to 4 minutes, turning once. The shrimp will be done when the bacon is fully cooked.
**Tip: Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
 
Barbecue Wine Glaze:
INGREDIENTS
  • 1 tablespoon olive oil
  • 1 large garlic clove, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground chipotle Chile pepper powder*
  • 1/3 cup Occidental Road Cellars red wine
  • 1/2 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 1/8 teaspoon liquid smoke**
PREPARATION
  1. Heat olive oil in heavy medium saucepan over medium heat. Add garlic, cumin, and chipotle Chile powder; stir 1 minute. Add wine and simmer 2 minutes. Stir in ketchup, vinegar, soy sauce, and liquid smoke; simmer 2 minutes longer. (Can be prepared 2 days ahead. Cover and refrigerate.)
 
*Available in the spice section of most supermarkets.

Lamb and Feta Sliders with Mint Mayo ​

Slider Ingredients:  
  • 1.5 Pounds of Ground Lamb 
  • 2 Teaspoons of Minced Garlic 
  • 1/4 Cup of Finely Diced Red Onion 
  • 1/2 Cup Crumbled Feta Cheese 
  • Salt & Pepper to Taste 
  • 16 Cucumber Slices 
  • Slider Buns 
Mayo Ingredients: 
  • 1 Cup of Mayonnaise 
  • 1/4 Cup of Chopped Mint 
  • 2 CLoves of Garlic, Smashed with salt to make a paste 
  • Lemon Juice to Taste ​​
Mix lamb, Garlic, Red Onion, and Feta. Sprinkle with Salt and Pepper. Mix well with hands. Form 16 patties 

Preheat the grill and wipe with canola oil. Grill sliders on low, indirect heat for approximately 6 minutes each side (130 Degrees for medium rare, 140 degrees for medium). 

For Mint Mayonnaise, mix all ingredients and ready to serve. 

Serve sliders on buns with cucumber slice and a teaspoon of mint mayonnaise.  Pairs well with our Occidental Road Cellars Estate 2013 Syrah! ​

Crab Fondue 

Event: WInter Wineland

Ingredients: 
  •   (2)   Jars Old English Cheese by Kraft
  •   (2)   8 oz blocks Cream Cheese
  • ​  ½ Pint Whipping Cream
  • ​  1/8 Tsp Cayenne Pepper
  •   ½ Tsp  Worcestershire Sauce
  • 1 lb Fresh Dungeness Crab (Cooked and Cleaned)

 Dash each of Garlic Powder, Salt and Pepper
 Heat and blend all of the ingredients until smooth and creamy before adding the crab.  Then, add the crab meat and heat through.  Stir frequently.  Serve with French bread.  Pairs deliciously with Occidental Road Cellars Estate Chardonnay and Rose de Pinot Noir!

Homemade Fudge Brownies 

Event: Wine Club Vineyard Barbecue

​Ingredients: 
  • 1 Cup Butter                                                                                               
  • 4 Ounces of Unsweetened Chocolate 
  • 1.5 Cups of Sugar 
  • 4 Eggs 
  • 1 Teaspoon Vanilla Extract 
  • 3/4 Cup of Flower
Over low heat, melt butter and chocolate in a saucepan and immediately remove from heat. 

In a bowl, combine eggs, sugar, and vanilla extract. Mix well. Add melted butter and chocolate and stir until combined. Then, add flour and stir to combine. 

Pour into a greased 13 x 9 baking sheet. Baking at 350 degrees for 20 - 24 minutes. Remove when edges and top start to appear firm but center is still soft. I remove mine from the oven at 20 minutes making them gooey and super yummy! Cool, slice and serve.  Paired wonderfully with Occidental Road Cellars 2008  Estate Sweetheart Syrah.
